Beef Spinach Fettucine Recipe

I like spinach. And I like fettuccine, so when I saw spinach fettuccine in the stores, I thought - why not? It has to be a healthier choice compared to normal fettuccine because of the spinach, right? Extra folate, iron, antioxidants, nitrates etc for energy boosting goodness!

Anyway, I bought a pack and cooked it with my usual recipe for tomato-based pasta sauce. There was just a hint of the spinach taste, so was a bit disappointed there. Maybe fresh spinach fettuccine would have a stronger taste? It had an interesting colour though.

Prep time:
About 1.5 hours

Ingredients:
1 large pot of water (about 2L)
500g dry spinach fettuccine
1 bottle 560g Dolmio Extra Tomato, Onion & Roast Garlic pasta sauce
250g mince beef
1 medium purple onions (sliced)
3 stalks celery (chopped)
250g button mushrooms (sliced)
1 green {or red, yellow} capsicum (chunked)
2 slices cheddar cheese
1/2 cup fresh mozzarella (sliced)
Dash of The Gourmet Collection Hot & Spicy Cajun Style spice blend (slightly hot)
A few pea sprouts

Method:
  1. Boil the large pot of water. Add in the spinach fettuccine and a pinch of salt.
  2. Cook pasta until al dente {firm but not hard} which is about 10-12 mins and drain well.
  3. For the sauce, add a little oil, cook and stir the beef and vegetables in a large saucepan until the beef is brown and vegetables tender.
  4. Add the ready-made pasta sauce. Cover and let it simmer for 10-15 mins. Stir occasionally.
  5. Peel the cheddar cheese into small pieces and add it into the sauce.
  6. Season with a dash of Hot & Spicy Cajun Style spice blend.
  7. Serve spinach fettuccine topped with melted mozzarella cheese and pea sprouts.
The pea sprouts were added just for aesthetics reason. Perhaps next time I will add spinach into the pasta sauce to really get that spinach taste haha. I think spinach fettucine goes well with smoke salmon, capers and a creamy sauce too :)
