

Prep time:
About 1 hour
Ingredients:
1 can of pineapple {cubed}
2 Zespri green kiwifruits
2 cups of cooked rice {best if hard left-over rice}
1 tbsp vegetable oil
1 medium onion {sliced}
4 cloves garlic {chopped finely}
1 cup of Chinese long beans {chopped}
2 medium tomato {diced}
3 tbsp Thai fish sauce
2-3 tsp of the pineapple syrup from the can
2 eggs
Method:
- Heat oil in a wok over high heat.
- Add the onion and cook until tender.
- Add in the garlic and toss until fragrant then add rice.
- Fry for about 2-3 minutes, then add the beans and tomatoes
- Fry about 3 minutes more, then add fish sauce and pineapple syrup.
- Fry about 3 minutes more then add green onions, pineapples and kiwifruits. Save some pineapples and kiwifruits for garnish.
- Toss all ingredients and make sure they are well-combined.
- Make a hole in the middle, pour the beaten eggs in then scramble all together.
- Serve hot and garnish with extra pineapple and kiwifruits.
If you want to serve it in a fresh pineapple like in the restaurants, halve the fresh pineapple lengthwise and leave the leafy top intact. Hollow out each half and use what you need for cooking, keeping the rest for future use. Slice off a bit on the outside of each half to create a flat, steady base.

I'm always sceptical about sweet & savory rice, but every time I eat it, I love it! What a great twist on a rice dish. Think I'll have to try that one x
