
I've made loads of cupcakes before but never cupcake cones and the boy suggested that I have a trial run first. The steps are about the same as baking basic cupcakes but my mum told me that the wafer cones soften very fast so I needed to check if they can last for at least a day if I bake the night before, or I've to bake early in the morning before work {I only took the afternoon off for her party}.
Decided to bake a batch of Red Velvet Cupcake Cones yesterday morning since I had an extra pack of Betty Crocker Red Velvet cake mix at home :P It makes about 24 cupcake cones.


About 1 hour
Ingredients:
1 Betty Crocker Red Velvet cake mix
24 Aladdin wafer cup cones
1 Cadbury Rocky Road chocolate bar {220g}
3 medium-sized eggs
1 1/4 cups water
1/3 cup vegetable oil
1 cup colourful sprinkles

- Heat oven to 180°C.
- Whisk cake mix, eggs, water and vegetable oil in a large bowl until smooth and creamy.
- Place wafer cones in muffin tins upright. Some people crumple aluminum foil and place around each cone for added support.
- Scoop about 1 tablespoon of batter into each wafer cone.
- Break the chocolate bar into pieces and put in each wafer cone as desired. We put in about 3 square pieces per cone.
- Cover with about 2 tablespoons of batter until 1/2 - 2/3 full {depending how high you want it to rise}. A good gauge is to add batter until the first inner ridge.
- Garnish with the colourful sprinkles.
- Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Cool and serve promptly.

The sprinkles didn't melt much and look pretty by itself. Should have added more though :P


If you fill up the cone to 1/2, it will rise to just about the top of the cone like this.



The boy tried them too and really liked the bottom of the cone with the added Cadbury Rocky Road chocolate. It has a delicious mish-mash of marshmallows, cherry flavoured jellies, peanuts and coconut, all covered in milk chocolate. You can choose to put in other kind of chocolates, cookies, fruits etc.
I kept the cupcake cones in Tupperware containers but they seem kinda "lao hong" the night after. Guess I've to wake up and bake early in the morning after all.

That was smart to do the trial run. I like that you put chocolate in the bottom, I bet that does add to the tasty. And hurrah for birthdays!! 6 is a big deal. :)

Those are fun! I made them for one of our boy's preschool class when they were itty bitty. I miss those days. With the school they are at now I can't bring in homemade treats. It's so odd because they have bake sales. *Shaking my head! Often times homemade treats end up being healthier then bought treats.

Did you use REAL Tupperware? Hehe. Also can't put them in a huge one coz then there'll be lots of 'air' to get into the cones!
