High Protein Pancakes for Mother's Day! ♡

I woke up pretty early for Mother's Day yesterday and decided to prepare pancakes for the family. I'd have loved to sleep in and be served breakfast in bed but hey, any mum knows that a mother's duty never ends, even on Mother's Day, right?? hahaha

We got the P28 Strawberries n' Cream Pancake Mix from The Fitness Grocer and I was craving for it so bad. They are fluffy & really have the fruity strawberry taste!

P28 Pancakes are a healthier version of the classic pancakes {no artificial preservatives, no artificial flavours, no trans fat, GMO-free} and are made with the highest quality protein on the market - whey protein isolate. All you have to do is to add water to the mix and cook as per normal. So easy.

Each serving {or 1 pancake} contains a whooping 14g of protein and are perfect for those on a high-protein diet like the boy and me. The Fitness Grocer also sells them in other delicious flavours like White Chocolate, Buttermilk Buckwheat & Chocolate Coconut {S$20.50/ 16oz tin}.


Prep time:
30 mins

Ingredients:
2 cups P28 High Protein Pancake Mix
2 cups water
44g San Franola Granola Cinnamon Almond
3 plums
1/2 punnet blueberries
1/2 cup Greek yogurt
3 tbsp icing sugar {optional}

Directions:
  1. Wash and prepare your fruits.
  2. Heat a non-stick pan to medium heat.
  3. Whisk P28 High Protein Pancake Mix and water together. Use less water if you like denser pancakes.
  4. Using a 1/2 measuring cup or a soup ladle, scoop the batter onto the hot pan. 
  5. Flip your pancakes once edges begin to appear dry and bottoms are golden brown. 
  6. Pancakes should be thoroughly cooked in about 2-3 minutes. Use a toothpick to check if unsure. The toothpick should come out clean.
  7. Plate the pancakes and dust icing sugar.
  8. Add a dollop of Greek yogurt on each pancake and top off with San Franola Granola.
  9. Add the fruits and serve.
This is just one way to eat the pancakes, of course. Some days I like to have them with berries and honey / maple syrup too #soawesome

When Lil Pumpkin woke up she gave me a handmade card for Mother's Day. I was touched.. and so tickled by what she wrote inside,

"Mommy when we go to Japan can I buy you something very special? But shhhh don't tell daddy ok? Dear Mummy,  thank you for taking care of me and being a great, wonderful and a lovely Mother. I love you."

Aww thank you my dear!! I'd like something very special when we go back to Japan this year too haha. I love you very much ♥

Wore our new matchy-matchy outfits from Glitter Glam  {Sunny Sleeveless Fit & Flare dress} out later that day.

I'm so blessed to be your mama. Thank you for giving me the privilege of being able to celebrate Mother's Day each year.

This Hi-Protein pancake mix sounds good and actually never tried making pancake from the pre mix. Reading the contents it is a good choice.

Those do sound like something I should try! I love pancakes. Your plate looks so yummy!

I sometimes make crepe pancakes and use coconut flour instead of all purpose. They turn out to be just like regular pancakes. That flour is gluten free, has natural sugars, is high in fiber and protein.

Heh, I would have gone for double dose of strawberries and added strawberries too :) Can't wait to see what Lil Pumpkin is getting you in Japan. When are you heading there?

Seems to be healthier choice compared to the usual pancakes. Would try out for sure. Your daughter and your outfits are awesome!
