Pineapple & Kiwifruits Fried Rice Recipe #14DaysofZespri

I've a big stash of Zespri kiwifruits at home because of the 14-Day Daily Scoop of Amazing Challenge and am always game to experiment with food. To be honest, this is the first time I'm making Pineapple & Kiwifruits Fried Rice but I thought if you can have the popular Pineapple Fried Rice, I don't see why you can't make a twist to it by adding kiwifruits as well! Added health benefits and flavour!

Thankfully it turned out rather tasty and the boy liked it a lot :) This dish is so simple to make and sure to be a conversation starter at summer parties because of its interesting ingredients.


Prep time:
About 1 hour

Ingredients:
1 can of pineapple {cubed}
2 Zespri green kiwifruits
2 cups of cooked rice {best if hard left-over rice}
1 tbsp vegetable oil
1 medium onion {sliced}
4 cloves garlic {chopped finely}
1 cup of Chinese long beans {chopped}
2 medium tomato {diced}
3 tbsp Thai fish sauce
2-3 tsp of the pineapple syrup from the can
2 eggs

Method:
  1. Heat oil in a wok over high heat.
  2. Add the onion and cook until tender.
  3. Add in the garlic and toss until fragrant then add rice.
  4. Fry for about 2-3 minutes, then add the beans and tomatoes
  5. Fry about 3 minutes more, then add fish sauce and pineapple syrup.
  6. Fry about 3 minutes more then add green onions, pineapples and kiwifruits. Save some pineapples and kiwifruits for garnish.
  7. Toss all ingredients and make sure they are well-combined.
  8. Make a hole in the middle, pour the beaten eggs in then scramble all together. 
  9. Serve hot and garnish with extra pineapple and kiwifruits.
For fried rice, don't ever use freshly cooked warm rice. It will be mushy. Also, I'm using the Tefal Comfort Touch non-stick wok so didn't add much oil, but you might need to add another tablespoon of oil before adding the rice if your wok isn't non-stick.

If you want to serve it in a fresh pineapple like in the restaurants, halve the fresh pineapple lengthwise and leave the leafy top intact. Hollow out each half and use what you need for cooking, keeping the rest for future use. Slice off a bit on the outside of each half to create a flat, steady base.

Well that is a very interesting recipe, but being the fussy eater that I am I don't exactly feel qualified to pass judgement.
