Avocados are one of my favourite food. They are so rich in flavour and provide nearly 20 essential nutrients including fiber, potassium, Vitamin E, Vitamin B and folic acid. Today I'm going to share a well-loved recipe using avocados. The creamy Avocado & Cheese Dip is so crazy simple to make with my Tefal Blendforce Tripl'Ax blender, and is really satisfying.
I usually make it when we have family movies nights and just snuggle on the sofa eating the dip with tortilla chips or fresh vegetable like celery. So much healthier than munching on popcorn! It is great to use as a sauce for salads or taco wraps as well.
Prep time:
30 minutes
Ingredients:
1 ripe avocado {dark skin and slightly soft when squeezed}
2 slices of cheddar cheese
1/2 cup mozzarella cheese
1 Laughing Cow light creamy Swiss cheese
2-3 tbsp water
Dash of lemon juice {optional}
Method:
- Cut and pit the ripe avocado.
- Scoop out the flesh of the avocado and put into the blender.
- Shred or cut the cheese and add into the blender with the water.
- Blend until desired consistency. Stop to stir with a spoon if it gets stuck.
- Transfer to a container and chill in the fridge for 15-20 minutes.
- Garnish and serve chilled.
- If you like it a bit spicier, add in cayenne pepper for that extra kick! Lil Pumpkin eats the dip as well so I don't put it in the main dish, although I add some to my portion.
- You can use any kind of cheese. There's no need to add extra salt because the flavour is very rich from the avocado and different types of cheese.
- The lemon juice stops the avocado from browning. However if you eat it fast enough {as we usually do!} there's no need for it.
- I make serving bowls using baked tortilla wraps. Saves me time on the washing hahaha
